I'm new here. Seriously considering getting an Eriba in a few years time as I head towards retirement although thats a few years away yet. Was thinking of getting camper van but they are astronomically expensive so an eriba is looking a better choice. I've currently got a Suzuki Grand Vitara 4 door 2.o Petrol but this has a maximum tow weight of 680 kg so I'm guessing I will have to upgrade my tow vehicle.

You're right that a 680kg limit will constrain you, but not totally.
For example a 2006 Puck 120 has a maximum total weight of 700kg, so as long as you don't need the full payload, you'd be OK, if the smallest Puck would meet your needs. Earlier models tend to be lighter - so the 2000 Puck was rated at 550kg - dry weight of 440 plus payload of 110kg.
The next larger Eriba, the Puck L, was 750kg total weight in 2000 (580+170), so if you could keep the load in the caravan down by putting most stuff in the car, it's not impossible.
Anything larger and you are in upgrade land!
Take another look at your towing limits. I suspect you are looking at the maximum 'unbraked' trailer weight. An Eriba is a braked trailer and the Grand Vitara's weight limit for that is up to a max of 1700kgs depending on model. If I am correct, that opens up the entire Eriba range I think.
BTW. Grand Vitara's are great cars.
Also. We have had both an Eriba, VW campervans (mostly, and since 1979) and now a big 7m motorhome. With a few odd things like a folding Rapido caravan in between. They are, of course, all a compromise. The motorhome is great to tour the UK and Europe for extended periods in winter, but we don't half miss the ability to jump in the car and go off for shopping, or for a day out that the Eriba offered.
As caravans go though, an Eriba is the only one you will see me towing.

Use this car and Caravan match website, I have a 2015 Vitara and the towing max is 1500kg. I would assume yours is the previous model, they tended to be heavier than the new model so I would assume it may be ok.https://towcar.info/GB/
Guys many thanks for the advice. Eriba purchase is still a good few years of so lots o think about before then :).
